Masala Chickpea & Kale Salad

Super simple and full of flavor, Masala Chickpea & Kale Salad is very filling and absolutely delicious! Topped with a a honey lemon tahini dressing and seasoned with a homemade Masala, this middle-eastern inspired recipe is the perfect dish for a hot summer day.

This recipe can be made Vegan (by switching honey with agave or maple syrup) and nightshade free (don’t add the paprika), and is gluten free, nut free, and dairy free.  It’s packed with protein at 17 grams per serving (which shouldn’t be your main concern… but that’s a story for another day), and filled with all the wonderful nutrients, vitamins, and minerals your body needs to stay healthy.

It’s light, but has a warm and savory taste to it.  The kale and chickpeas also have enough oomph to keep you feeling full and satisfied!  On top of this, it’s really easy and quick to make!

Instructions
  1. Toss chickpeas in masala and oil and place on baking sheet with unpeeled garlic cloves. Bake at 375 F for 20-25 minutes. Chickpeas should be golden brown and a bit crispy.
  2. Peel garlic and mix all dressing ingredients together.
  3. Mix dressing and kale until well coated.
  4. Mix in chickpeas, season with salt and pepper, add more Masala if needed, and enjoy!

Can be stored up to 4 days in refrigerated, air tight container.
