Instructions
  1. Chop all vegetables into rounds.
  2. Heat all vegetables and oil in large pot over med-high heat until leeks are golden.
  3. Add garlic and cook for about 1 min.
  4. Add water, basil, salt, and pepper. Bring to a boil.
  5. Add pasta and cook until al dente.
  6. Season with salt/pepper/basil to taste.
  7. Top with parsley, serve, and enjoy!

Store in an airtight container in fridge for up to one week.
