Chocolate Covered Macaroons
These Chocolate Covered Macaroons are dreamy!!  Dark chocolate, sweet honey, and crunchy coconut form a perfectly melded creation that will call to you in your dreams.

Instructions
  1. Line a muffin tin with cupcake liners.
  2. Mix together Macaroon ingredients in a food processor (a blender will work as well) until ingredients stick together.
  3. Place about 1 tablespoon in each muffin tin and smooth into an even layer with a spoon.
  4. Place Chocolate Mix ingredients in a microwave safe bowl and heat for 25 seconds at a time, stirring in between, until melted.
  5. Pour about 1 tsp of chocolate over the Macaroon base and smooth out so it covers all the coconut. If any chocolate is left, evenly distribute it among the macaroons.
  6. Sprinkle with coconut flakes and place in the freezer for about 25 minutes.
  7. Let thaw for 5 minutes before devouring.
Recipe Notes

Best stored in an airtight container in the freezer for about one week.
